For this particular salad, you can actually store it with the dressing. Game changer! Since they’re hearty veggies, they won’t get soggy. As if that weren’t enough good news, brussels sprouts are a part of the cruciferous veggie family that are shown to have anticancer effects, according to the National Cancer Institute. Does that sell you? Pair this with a light, lemon maple vinaigrette! This one is sure to find its place on your weekly rotation.
2. Vegan Jalapeno Popper Corn Salad
It will be challenging to stop eating this one once you’ve started. You’ve been forewarned. Salty soy-curl bacun, spicy roasted jalapenos, sweet corn, and creamy dressing. Drooling. This is the perfect recipe for all of your Labor Day weekend cravings or the perfect shareable as we move into fall gatherings. Equally delicious served warm or cold and sure to be a new crowd pleaser.

Crisp, fall weather and vegan cooking. Is there anything better? Apple picking season is upon us. If you’re anything like me, you find every opportunity to savor the delicious seasonal flavors. That’s why this light and bright apple coleslaw is a perfect fit. It’s healthy, delicious, and super simple! Sweet and crunchy with a peppery creamy dressing. Perfectly paired with smoky baked beans or this delicious vegan pulled pork sandwich.
4. Quinoa Kale Salad with Roasted Vegetables
If you haven’t fully committed to a roasted vegetable salad, this is your sign. Sweet, caramelized vegetables, tangy cranberries, and a hearty kale base. The maple, balsamic dressing is incredibly easy but brings an added layer of depth and flavor to an already delicious meal. I find that this recipe is satisfying enough for lunch or dinner, but it also will impress at any holiday party or gathering. I managed to quickly prepare this for a party last fall and was shocked (and slightly disappointed) to leave with no leftovers.
5. Vegan Taco Salad with Creamy Southwestern Dressing
One recipe that never fails to disappoint is a savory taco salad. I simply cannot resist the flavors of cumin and chili paired with a tangy lime dressing. Arlo’s in Austin, Texas is a vegan staple, known for their house-made burger and setain crumble tacos.
There are so many protein options to choose from when making plant-based taco meat. A staple for many is shredded jackfruit, like in these jackfruit tacos. Another of my favorite, healthy options at home is a chickpea-walnut crumble, as laid out in this recipe. It’s simple, flavorful, and budget friendly. Perfectly paired with crisp romaine, black beans, fresh veggies, and an easy southwestern dressing!
