Vegan Culinary Schools in So Cal?

Is this just non-existant?? So far I've found something in NY, TX, and a few up north around Berkley. Where do all the vegan chefs get trained? Did everyone go to omni culinary school before turning veg?

I know there are the Spork Foods Classes ($65 a pop...wow!) and Viva La Greens ($100 for 5 or 6 classes) but nothing long term. Wondering what my options are (realistically) if I wish to pursue such an endeavor. Hm...
