When he did an interview about making Kingdom of Heaven, he talked about eating goats. So I think that pretty much rules him out as a vegetarian.

According to imdb.com:
"He used to be a vegetarian, but he had to go back to eating meat when he was filming The Lord of the Rings: The Fellowship of the Ring (2001)." It doesn't explain why that was, but I'd certainly heard this rumour before. Maybe needs checking out and taking him off this list.
