I don't have the first hand experiences to post all of the restaurants that cater for Veggies in Hiroshima (there are many that aren't listed as "vegetarian") so I'll post a useful website: www.gethiroshima.com - has good guides to eating around the city, including resteraunts that cater for veggies, and other good bits and pieces too!
Thought this might be helpful since a couple of the posted restaurants are a bit out of the city centre.
